Another fusion favorite: this creamy masala pasta! Made with all the classic curry ingredients and spices, but incorporated into this flavor-bursting pasta.
Easy. Creamy. Dreamy. These are words to live by. This masala pasta is actually based off of the gobhi musallam (whole roasted cauliflower) I made on Thanksgiving! As I was making the sauce for that, I knew I wanted to use it for pasta so that’s what I did. This creamy masala pasta is easily one of the most flavorful pastas I’ve had!
The Rundown
1. Soak cashews for 4+ hours in room temperature water or at least 15 minutes in boiling water. When the cashews are blended, they’ll make the pasta sauce super creamy!
2. Cook pasta to package instructions. I used Banza’s penne pasta!
3. Start cooking everything the same way you’d start off a curry. FIrst the onion, ginger, and garlic. Then the tomatoes and spices.
4. Blend the sauce to make it EXTRA smooth.
5. Combine the creamy sauce and pasta! Add some more water to adjust the thickness of the sauce. I use kasoori methi for some extra Indian flavor, but if you don’t have any, that’s no problem.
Creamy Masala Pasta
Ingredients
- 4 oz. pasta (I used half a box of Banza's chickpea pasta)
- 10 cashews *soaked in advance
- ½ onion, chopped
- 2 garlic cloves
- ½ inch ginger, minced
- 2 tomatoes, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp garam masala
- ½ tsp red chili powder
- ½ tsp ground turmeric
- 1 tsp kasoori methi optional
- handful of spinach
Instructions
- Cook pasta to package instructions and set aside.
- In a pan over medium heat, add oil and then onion, ginger, and garlic. Saute until onion is transparent.
- Add tomatoes and all spices except kasoori methi (if using). Cook until tomatoes are soft and keep together well.
- Turn off the heat and let the mixture cool. Blend it with the soaked cashews.
- Pour the sauce back into the pan and heat on medium. Add about 1/4 cup water to adjust thickness of sauce if needed.
- After a few minutes, add kasoori methi. 2-3 minutes later, add a handful of spinach and the pasta. Mix it all together and serve!
