Carrot Cake Oatmeal

Easy carrot cake oatmeal for when you want carrot cake but in 10 minutes. These stovetop oats are made all cozy and nice with classic carrot cake spices like cinnamon, ginger, and nutmeg. It’s the perfect way to make your sweet breakfast healthy and delicious!

Easter is on Sunday and I don’t really celebrate, but I’m always down for carrot cake oats so now seems like the right time to put them out there. Because sometimes you’d love to have a three-layer carrot cake but don’t have the time or energy to make one, so carrot cake oatmeal will have to do. No complaints though, because you get a bowl of pure joy!

These delightful oats were made in celebration of Earth month with One Degree Organics rolled oats! My love for oats is never-ending, so of course I love One Degree’s organic and gluten-free sprouted oats. They’re glyphosate free and you can read more about what that means here. They’re also perfect for Earth month because 1) oats are sustainably produced and 2) One Degree sources their oats from farmers who only use plant-based farming methods. When Mother Earth is happy, so am I.

plant-based milk and water

grated carrot

cinnamon, ginger, nutmeg, and cardamom

sea salt

toppings! almond butter, plant-based yogurt, dark chocolate, bananas, and pecans.

Carrot Cake Oatmeal

Cook Time 10 minutes mins
Servings 1

Ingredients
  

  • ½ cup rolled oats
  • ¼ cup grated carrot ~ 1 small carrot
  • ½ cup water
  • ½ cup oat milk
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • 2-3 crushed cardamom pods
  • ½ tsp vanilla extract
  • ¼ tsp sea salt

Instructions
 

  • Add every ingredient except for milk to a small saucepan on medium heat. Cook on medium for 3-4 minutes before adding milk. 
  • Add milk and cook until it’s at your desired texture. 
  • Top with bananas, pecans, almond butter, plant-based yogurt, and dark chocolate!

    Sorry this wasn’t clear at all haha. I use green cardamomom pods and crush them until they are close to ground, so like mortar and pestle them basically. A pinch of ground cardamom is definitely easier!

    Do you remove the crushed cardamom pods before eating? And do you use green or black cardamom? Fresh or dried?

    Oh my gosh, this looks so yummy! We love carrot cake and will have to give this breakfast version a try. Love all of the spices, especially cardamom, in this dish!
