Blueberry Banana Breakfast Cake
Ingredients
- ¾ cup mashed bananas (2 bananas)
- ½ cup plant-based milk
- 1 tbsp lemon juice
- ½ cup maple syrup
- 1 tbsp flaxseed meal
- 1.5 tsp vanilla extract
- 1 tsp cinnamon
- 1 cup oat flour *process 1.25 cups of rolled oats
- 1 cup spelt flour sub all purpose flour or whole wheat pastry flour
- 3 tsp baking powder
- ½ tsp sea salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350 F and grease a 9×13 inch tray with vegan butter or coconut oil.
- Mash bananas and mix with milk, lemon juice, maple syrup, flaxseed meal, and vanilla extract. Let this mixture sit for a few minutes before adding the rest of the ingredients.
- Add cinnamon, oat flour, spelt flour, baking powder, and sea salt to the same bowl. Mix it all together and pour it into your tray.
- Top the batter with blueberries. Bake for 35-40 minutes!
- When serving, I highly recommend popping them in the toaster and then topping with coconut yogurt and sliced almonds.
