Blueberry Pitaya Smoothie & Oat Bowl

Now is the perfect time to take in the last few moments of summer with a smoothie bowl. As great as smoothie bowls are all year long, there’s something special and satisfying about them in the summertime. 

The great thing about this bowl is that it keeps summer alive! Just stock up on all your frozen fruit and you can take yourself back to summer in no time.

packed with fiber because of the oats, which also thicken the texture!

Blueberry PItaya Smoothie Oat Bowl

Keep summer alive with this refreshing, nutrient-filled bowl.

Servings 1

Ingredients
  

  • 1/2 cup frozen blueberries
  • 1/2 cup frozen dragonfruit/pitaya
  • 1/2 a frozen banana
  • 1 cup spinach
  • 1 tbsp nut butter
  • 1/2 cup nut milk or other dairy free milk
  • 2 tbsp yogurt 1/2 tsp vanilla
  • 1/2 cup rolled oats

Instructions
 

  • Add all ingredients except the oats to a high speed blender.
  • Start blending on low and increase to high as you go. Blend until no solid chunks are left. ~ 1-2 minutes.
  • Pour smoothie into bowl and add oats. Let sit for 15 minutes.
  • While the oats sit, add your favorite toppings! I topped mine with hemp seeds, chia seeds, coconut flakes, and an almond milk pulp date ball (tastes like cookie dough). Some other ideas would be nuts, pumpkin seeds, cacao nibs, or granola.
