Jump to RecipeIf you don’t really want to cook lunch but still want something flavorful, here’s a chickpea chaat sandwich inspired by the flavors of chaat, a broad category of Indian street food with a fun balance of spicy, sweet, tangy, refreshing. I like to call it organized chaos. A can of chickpeas is a $1 and can go a long way so on the days I just want something quick and reliable, I like to mash them and add some of the ingredients common in chaat. Like onions, cilantro, mint, yogurt, lemon juice, and then some ground spices. I think I’m learning that I would turn everything into chaat if I could, and this sandwich proves that it’s a worthy mission.
Chickpea Chaat Sandwich
Ingredients
- 1 14 oz. can of chickpeas
- ¼ cup chopped red onion
- ½ a green bell pepper, diced
- 2 tbsp chopped cilantro
- 2 tbsp chopped mint
- 2 green chilis, minced (1 for less spicy)
- 3 tbsp unsweetened plain nondairy yogurt
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp garlic powder
- 1 tsp chaat masala (measured from the heart)
- ½ tsp black pepper
- salt to taste
- ½ tbsp lemon juice (from half a lemon)
to assemble the sandwich
- bread of choice
- tomato
- avocado
- cucumber
Instructions
- In a bowl, smash half of the chickpeas and leave the rest of the chickpeas whole.
- Add the rest of the ingredients for the chickpea chaat! Add chaat masala, salt, and lemon juice to taste.
- Toast your bread and smash avocado (or vegan mayo) on both pieces. Add tomatoes and cucumbers if you want, followed by the chickpea chaat.
