4-Ingredient Banana Pancakes

This post is going to be short. Just like the amount of time it’ll take you to whip up this majestic stack of 4-ingredient banana pancakes. 

You read that right. 

Banana, oats, milk, baking powder. And some optional add-ins I highly recommend, but the pancakes will still be great if you choose to omit them.

4 ingredients is all it takes to satisfy all your weekend pancake craving. 4 ingredients is all it takes to put a hot and fluffy stack on the table. And 4 ingredients is all it takes to finally use your ripe banana for something besides banana bread. 

Given how odd the grocery shopping situation has been for us lately, I figured it was fitting that April‘s pancake of the month keeps things simple, because that‘s what we all need right now.

Basically, these pancakes are oatmeal, but in a more fun form. Made with simple, wholesome ingredients and sweetened only with banana, you bet you can eat many (and I mean many – we love volume eating) of these pancakes and still leave the table feeling energized, because this stack is not about to weigh you down. 

I know there are probably plenty of skeptics regarding this whole low-ingredient pancake kick, but if you’re ever in a pinch, give it a try! You will prove yourself wrong. 

4-Ingredient Banana Pancakes

For all your quick fluffy stack needs.

Prep Time 5 minutes mins

Ingredients
  

  • 1 ripe banana mashed
  • 1 cup quick/rolled oats OR oat flour
  • 1 cup almond milk or milk of choice
  • 1 tsp baking powder
  • 1 tsp cinnamon optional, but recommended
  • 1 tsp vanilla optional, but recommended

Instructions
 

  • If you have quick or rolled oats, use your food processor to process them into a flour-like consistency.
  • Mash the banana with a fork.
  • Whisk all ingredients together in a bowl or blend them together in a processor.
  • Heat a pan over medium heat and grease with butter, coconut oil, or cooking spray.
  • Spoon about 2 tbsp of batter per pancake. Highly recommend making multiple at a time!
  • Flip once the pancake has bubbles (~3 minutes) on its surface. Flip and cook for another ~ 2 minutes.
  • Get serious with some toppings! I used apples, coconut, pumpkin seeds, cacao nibs, and a peanut butter/maple syrup mix.
