The end of summer means burgers. Now that I’ve discovered how easy it is to make burgers though, I’ll probably keep them coming long past the end of summer.
These black bean, corn, and quinoa burgers are super good for you and really simple! I paired them with sweet potato fries and a creamy guacamole, because that is never not a good idea. They hold together well and are put together in no time.
The Rundown
1. Cook your black beans, corn, and quinoa beforehand for this recipe to come together in a pinch.
2. Mix all the ingredients in a bowl and mash them hard with a potato masher.
3. Roll into patties.
4. Pan fry them in a little oil.
5. Serve however you’d like them!
Black Bean, Corn, and Quinoa Burgers
Ingredients
- 1.75 cups cooked black beans or 1 14 oz. can
- 1 cup corn
- ½ cup quinoa sub brown rice
- ½ tsp ground cumin
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp black pepper
- salt to taste
- ⅓ cup panko breadcrumbs
Instructions
- Cook your black beans if starting with dry black beans. Boil your corn and cook your quinoa.
- Add all ingredients except for breadcrumbs in a large bowl. Mash them with a potato masher.
- Add breadcrumbs and combine throughout the mixture.
- Form patties with your hands.
- Heat 1 tbsp oil in a pan over medium heat. Cook each patty for 5 minutes per side.
