This hummus quesadilla is like a quesadilla, but the “queso” is replaced with hummus! Stuffed with spinach, mushrooms, and onions, and ready to eat in 10 minutes.
The plant-based quesadilla of your dreams. It’s like a quesadilla but with hummus instead of queso. The hummus actually gets so creamy–you might surprise yourself. It’s stuffed with mushrooms, spinach, and onions. Bonus points if you use homemade hummus (here is my recipe!) but feel free to use what you got.
I used two Siete Foods cassava flour tortillas (but please use whatever), slathered some homemade hummus on both, stuffed it with veggies, and cooked it on a pan with some olive oil. It’s so simple I feel kind of silly making this a blog post lol. So I’ll just leave you with some photos of what you could have in front of you about 10 minutes from now.
Hummus Quesadilla: Hummusadilla
Ingredients
- 2 tortillas of choice
- 4 tbsp hummus
- 2 mushrooms, thinly sliced
- ¼ onion, thinly sliced
- spinach
- 1 tsp olive oil
- avocado for topping
Instructions
- Spread hummus on both tortillas.
- Add all veggies on top of one of the tortillas: mushrooms, onions, and spinach.
- Add the second tortilla on top.
- Cook on medium heat for 4-5 minutes on each side. Top with avocado and more hummus!
