The Rundown
1. Toast your sourdough with a bit of olive oil and garlic powder. Sounds like an extra step, but you’re gonna want it.
2. Spread mashed avocado on one of the toasts and hummus on the other.
3. To one of the toasts, layer on some arugula, tomatoes, peaches, smashed chickpeas, corn, and balsamic. Put it together and you have a sandwich!
