All I do lately is roast squash and call it a meal, but I’m more than ok with that––especially when it’s on top of some crisp and fresh organic Earthbound Farm red butter lettuce. There’s really nothing quite like an easy colorful fall salad with the essentials. Is it overboard on the fall things? Maybe. But is it flipping delicious and makes you want to savor fall and wish you lived on the east coast only during this season? Oh yeah.
I’ve had big bowls with this lettuce more times than I can remember this week –– partially because I have a lot of it but mostly because they perfectly accompany anything I want to top them with! The Rundown
1. Toss the delicata with maple syrup, cinnamon, and sea salt and get it in the oven for 25 minutes while you assemble everything else. You’ll be obsessed with it when it comes out. Guaranteed.
2. Mix your dressing ingredients in a bowl. All you’ll need: pumpkin puree, tahini, apple cider vinegar, maple syrup, and sea salt.
3. Air fry (or oven bake) your sourdough croutons after mixing the cubes with olive oil and herbs. If using your oven, put it in with the delicata during the final 15-20 minutes.
4. Toss the salad together!
Maple Cinnamon Delicata Salad with Pumpkin Tahini Dressing
Ingredients
- 3-4 handfuls red butter lettuce * did not measure this
- ½ apple, thinly sliced
- ½ pomegranate
- ¼ cup toasted pecans
Maple Cinnamon Delicata
- 1 small-to-medium delicata squash
- 1 tbsp maple syrup
- ½ tsp ground cinnamon
- ¼ ts sea salt
Pumpkin Tahini Dressing
- 1 tbsp pumpkin puree
- 1 tbsp tahini
- 1 tbsp apple cider vinegar
- 1 tsp maple syrup
- pinch of sea salt
- 3 tbsp water
Herby Air Fried Croutons
- 1 chunky slice of sourdough (~ 15-20 1-inch cubes)
- 1 tsp olive oil
- ½ tsp dried oregano
- ¼ tsp garlic powder
Instructions
- Preheat the oven to 400 F.
- Cut delicata squash and toss with maple syrup, sea salt, and tsp cinnamon. Roast in the oven for 25 minutes.
- Mix all ingredients for the dressing in a small bowl.
- Cut sourdough into 1-inch cubes and toss with olive oil, oregano, and garlic. Air fry at 380 F for 8-9 minutes. Alternatively, bake with the delicata in the final 15-20 minutes.
- Assemble the bowl! Start with a bed of lettuce. Then add delicata, apples, croutons, pecans, pomegranate seeds, and dressing. Enjoy!
