How to Make This Caramelized Onion and Balsamic Mushroom Toast
This recipe takes just 15 minutes!!! It’s perfect for the beginner looking to level up weekend brunch or anyone in need of a simple comfort meal.
What you’ll need:
Onions, olive oil, and garlic. You’ll cook these until the onions are browned and glossy.
Leeks and mushrooms. You can use any mushrooms, but I used cremini mushrooms (otherwise known as button mushrooms or baby bella mushrooms). Leeks are often used in similar ways as scallions or onions, but here we just use the green part and cook it with the mushrooms.
Balsamic vinegar and tamari. The balsamic vinegar adds a sweet yet tart flavor that complements the umami of the tamari extremely well.
Plant-based yogurt or cream cheese. You’ll need this for spreading onto the bread after it is toasted, but it isn’t essential. My favorite is Kite Hill!
Caramelized Onion and Balsamic Mushroom Toast
Ingredients
- 2-4 slices of bread of choice *you can make 2 very loaded toasts or 3-4 less loaded toasts
- ¼ cup plant-based yogurt
- 1.5 tbsp extra virgin olive oil
- 1 small red onion, sliced
- 1 garlic clove, minced
- ¼ cup chopped leeks (~ a third of the green part on one bundle)
- 5 medium cremini mushrooms, sliced
- ½ tsp red chili flakes
- ½ tsp black pepper
- 1 tbsp balsamic vinegar
- 1 tbsp tamari *sub soy sauce
Instructions
- Heat olive oil in a pan over medium heat. Add the onions and minced garlic. Let the onion cook until browned and glossy, so about 7-8 minutes.
- Add the leeks and mushrooms. Cook until the mushrooms are cooked and soft. It should take about 5 minutes. Add red chili flakes and black pepper.
- Finish off with balsamic vinegar and tamari. Stir together for 1-2 minutes.
- Spread some yogurt on toasty bread and add the banging toast topping you just made.
