If you don’t really want to cook lunch but still want something flavorful, here’s a chickpea chaat sandwich inspired by the flavors of chaat, a broad category of Indian street food with a fun balance of spicy, sweet, tangy, refreshing. I like to call it organized chaos. A can of chickpeas is a $1 and can go a long way so on the days I just want something quick and reliable, I like to mash them and add some of the ingredients common in chaat. Like onions, cilantro, mint, yogurt, lemon juice, and then some ground spices. I think I’m learning that I would turn everything into chaat if I could, and this sandwich proves that it’s a worthy mission.
