The wholesome cookie that looks chewy, but you bite in for that crunch. Quick prep and bake time (we love that about cookies!) and made with simple and real ingredients. Good for the body and the soul.
Granola in cookies, aka the snack and dessert you never knew you needed. Chewy and with a crunch, like pretzel cookies, but it hits different. And If you decide to start making them right now, you can have some in front of you in about 25 minutes, which is what we just love about cookies.
The only catch is you do need some granola to do it, but any recipe will work! I’ve included my tahini granola recipe below in case you want to use that. I tend to make so much granola at one time that I had plenty leftover for using as a topping on oats and smoothies after using it for this recipe.
The Rundown
You’ll need some granola (recipe below) and almond flour, which is perfect for baking wholesome & fluffy treats.
Just your classic cookie instructions. Separate wet and dry ingredients, and then mix. Top with more granola and chocolate chips if you want (and obviously you do) and pop them in the oven!
Tahini Granola
– 2 cups rolled oats
– ½ cup mixed nuts (I used cashews and almonds)
– 1/4 cup coconut sugar
– 1 tsp baking powder
– pinch sea salt
– dark chocolate chunks
– 2 tbsp shredded coconut
– 1/4 cup extra virgin coconut oil
– 1/4 cup tahini
Add all ingredients except coconut oil and tahini to a mixing bowl. Mix coconut oil and tahini separately and then pour over and combine well. Bake at 325 F for 25-30 min.
Crunchy Chunky Granola Cookies
Ingredients
- ¾ cup granola of choice
- 1.25 cups almond flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 tbsp coconut sugar
- 1 egg
- ⅓ cup extra virgin coconut oil (melted)
- 2 tbsp almond butter
- 1 tsp vanilla
- 2 tbsp maple syrup
Instructions
- Preheat oven to 350 F.
- Add all dry ingredients to a mixing bowl: granola, almond flour, baking powder, cinnamon, coconut sugar.
- Whisk all wet ingredients in a separate bowl: egg, coconut oil, almond butter, vanilla, maple syrup.
- Combine wet and dry ingredients and mix well.
- Line a baking sheet with parchment paper. Scoop about 2 tbsp of batter per cookie and space them about an inch apart from each other.
- Top with more granola and dark chocolate chunks or chips. Bake for 12 minutes!
