Sometimes you just gotta taste food for what it is. Not much of a dressing on this salad – just a whole lot of natural flavor and the sweet-savory duo.
Currently savoring the final days of summer and preparing to confront my fear the day watermelon and figs cease to be in season. Swallowing the fear quite literally with a simplistic combo that highlights the goodness that is inherent in each ingredient, with few extra flavors added. This salad features watermelon, figs, fresh mozzarella (my latest obsession!), kale and collard, mint, sea salt, and balsamic.
Watermelon, Fig, and Mozzarella Salad
Ingredients
- 2 cups watermelon, cubed
- 4-5 figs, quartered
- 2 cups mixed kale and collard
- ¼ cup fresh mozzarella
- 1 tsp balsamic
- pinch sea salt
- 4-5 mint leaves
Instructions
- Start with a bed of greens. Add watermelon, figs, and mozzarella. Drizzle the spoon of balsamic throughout and top with mint leaves and sea salt.
