Coffee Date Balls

Ingredients
  

  • 1 cup almond milk pulp (sub with 6-8 dates)
  • 2 cups dates (~ 16-18 blended medium dates)
  • 1/2 cup oats
  • 1/4 cup tahini sub any nut/seed butter
  • 2 tbsp peanut butter sub any nut/seed butter
  • 1/4 cup coconut flakes
  • 2 tbsp ground coffee bean
  • 1/4 cup chopped cashews
  • 2 tbsp chia seeds
  • 1/2 tsp sea salt
  • 1 tbsp coconut oil optional

Instructions
 

  • Mash dates and almond milk pulp (if you have it) in a large mixing bowl.
  • Add the remainder of the ingredients to the bowl and mash until all ingredients stick and stay together.
  • Form balls with approximately 1 tablespoon of the mixture. 
  • Freeze and enjoy! They keep for about 3 months in the freezer.
