If you have quick or rolled oats, use your food processor to process them into a flour-like consistency.
Mash the banana with a fork.
Whisk all ingredients together in a bowl or blend them together in a processor.
Heat a pan over medium heat and grease with butter, coconut oil, or cooking spray.
Spoon about 2 tbsp of batter per pancake. Highly recommend making multiple at a time!
Flip once the pancake has bubbles (~3 minutes) on its surface. Flip and cook for another ~ 2 minutes.
Get serious with some toppings! I used apples, coconut, pumpkin seeds, cacao nibs, and a peanut butter/maple syrup mix.
