Spicy Ramen and Veggie Stir Fry

Ingredients
  

  • 2 blocks of ramen * can be done with other noodles but I've only tried it with ramen
  • 1 tbsp oil
  • 1 garlic clove, minced
  • cup chopped green onion * totally estimated this
  • ½ red bell pepper, sliced
  • ½ green bell pepper, sliced
  • 2 mushrooms, sliced
  • ¼ purple cabbage

Spicy Sauce

  • 1 tbsp tamari sub soy sauce
  • 1 tsp rice vinegar
  • 1 garlic clove, minced
  • ¾ tsp red chili powder
  • ¼ tsp black pepper
  • 1 tsp coconut sugar
  • 1 tsp arrowroot starch sub cornstarch
  • ½ tsp almond butter
  • 2 tbsp coconut milk
  • cup water

Instructions
 

  • Half cook (they should be a bit chewy and undercooked when you’re done) ramen to package instructions. Do not take the ramen out of the water when it’s done. 
  • Mix all ingredients for the sauce in a small bowl.
  • Heat oil in pan over medium heat, and add garlic, veggies and salt.
  • Let veggies cook before pouring all of the sauce over them.
  • After pouring the sauce, bring to a boil, reduce to medium, and simmer veggies for 4-5 minutes.
  • Add noodles to pan and cook on medium-high for a few minutes, until noodles absorb the sauce. 
  • Top with fresh green onions and sesame seeds.
