Black Bean, Corn, and Quinoa Burgers

Servings 10 patties

Ingredients
  

  • 1.75 cups cooked black beans or 1 14 oz. can
  • 1 cup corn
  • ½ cup quinoa sub brown rice
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • salt to taste
  • cup panko breadcrumbs

Instructions
 

  • Cook your black beans if starting with dry black beans. Boil your corn and cook your quinoa.
  • Add all ingredients except for breadcrumbs in a large bowl. Mash them with a potato masher.
  • Add breadcrumbs and combine throughout the mixture.
  • Form patties with your hands.
  • Heat 1 tbsp oil in a pan over medium heat. Cook each patty for 5 minutes per side.
